A hallmark of french country cooking, the traditional cassoulet is a rich slow-cooked stew filled with beans ,sausage, pork and duck fat. In this version, I use a rich vegetable based stock made with carrots parsnips, onions, tomatoes, walnuts and shoyu that both provide amazing flavor and lots of nutrients. The stock is slow cooked with white northern beans and more root vegetables for a deeply complex nourishing flavor.
